In the pretty wine-growing village of Marlenheim, this former posthouse, now a fine dining institution, comprises a cluster of picturesque buildings set around a paved inner courtyard and a well-groomed garden. The impressively rendered cooking is both delicate and eclectic, without forgetting some of the classics that contributed to the establishment’s reputation: white asparagus from Alsace in puff pastry with a hollandaise sauce, raviole of smoked foie gras and a gutsy truffle-flavoured jus, or the great grandfather’s, Paul Wagner vol-au-vent… The epitome of tradition!
